The best advice I can give for that track is don't take the turns too fast and learn how to avoid the thwomps. If you can just manage to not fall off the track you should do alright. Also, make sure you do good in the tracks before that one so that you can afford to get a 3rd or 4th place and still get the gold for the cup.
I beat Mario Kart back in the day and Rainbow Road was hard but I still managed. I didn't even own the game. I also beat Street Fighter 2 on the hardest difficulty with Guile and Zangief. I have no idea how. In some ways I was a better gamer when I was younger but I'm also better in some ways now. I'm definitely a smarter gamer but I get more frustrated with hard games like Megaman.
Start a drift with a jump. Doing this and mastering the drift, you should do okay. As for Rainbow Road, simply don't accelerate when you need to make a turn. Unlike the later Mario Kart games, this one is a gem in that it's less luck based with the items. No flying blue shells bullshit. And long live the feather.
I should also mention that in the first lap the thwomps won't come down on you, they just stay suspended in the air. Take advantage of that and try to get 1st on the first lap and just try and hold that position for the rest of the race. Although that is easier said than done
While some of the later Mario Kart games have a fairly reasonable amount of challenge, the SNES original beats me. I just really can't be bothered with frustrating myself to death for getting all gold medals even though I think it is an absolute classic.
