Please be patient with me as this is the first gaming console i have owned.
I have brought myself a Switch Red and Blue Oled console and a few games inc Mario Deluxe 8 which when looking at the spec you can use a Joy-Con Steering Wheel which i also brought.
When playing Mario and using the wheel there is very slow response to the movement of the wheel i have pressed the + and looked in the settings for the Joy-Con but i cannot get the settings up for the wheel only Joy-Con grip, the only thing i can do with the wheel is go in a straight line, i can't even release any of the bonus things you pick up on the way i.e banana,star rocket, etc every thing works perfect with the Joy-Con Grip but we would like to play with two players with the wheel.
@Thewall Make sure you're in half joycon mode. If you struggle to change the joycon mode in the game, press home button(to open switch home screen), select controller icon on switch home screen, unsync your joycon and then resync it while holding the joycon sideways. Then go back into the game.
Also make sure Tilt Controls are ON in the game, and that Smart Steering is OFF. If you're playing Mario Kart, and it steers funny, or doesn't seem steer logically, it often means Smart Steering is on. You can check the status of these settings on the kart customization page by pressing (+), you'll see the setting icons at the bottom of the kart stats. Or, during a race press (+) and the pause menu prompt will have the setting icons.

For some reason, I cannot sync my half joycon in the home screen controller menu. We USED TO be able to. Maybe an update changed something? Anyway!, when I booted up Mario Kart, I used the half joycon to hit L+R at the game's opening screen, and it synced the joycon as a half joycon. So, that method works.
Or, while in game, unsync the joycons and resync them as half joycons.
